Our youngest daughter's birthday was last weekend! Can't believe she's already 2!! Time flies! Anyway as my older daughter and I were planning her party we couldn't decided on what to do for a cake. Then we found this brilliant idea of cutting a watermelon into a cake! We just topped it with some berries and candles and it was perfect! I was planning on frosting it, like I had seen some people do, but since we also made pancakes, our meringue cookies and homemade pink marshmallows that day, I thought we could do without the extra sugar. Good call to because It was perfect along the sweeter treats! This would be great at any summer party or celebration to add a touch of pizazz to the table! If you're wondering how I made our homemade marshmallows pink I replaced the water in the recipe with water strained from boiling beets. And no, it did not affect the flavor, it just changed to a nice soft pink, perfect for little girls...or big girls. :)


  • 1 large watermelon
  • Toppings of choice


  • Cut the watermelon into a “cake” shape¬†
  • Layer on favorite toppings
