Vegan Fall Salad with "Cheesy" Cashew Dressing

This is a great fall salad to have at the thanksgiving table or for an early lunch before the feast!

Salad

Ingredients

  • 7 cups fresh spinach
  • 1 cup pomegranate seeds
  • 1-2 persimmons, cubedĀ 

Steps

  • Toss it together and add the dressing

"Cheesy" Cashew Dressing

Ingredients

  • 1 cup cashews, soaked in water for 4-6 hours
  • 1/2 cup lemon juice, add up to 2 Tablespoons to taste
  • 1/2 cup water
  • 1 tablespoon fresh parsley
  • 1/2 teaspoon dried thyme
  • 6-8 tablespoons nutritional yeast
  • 2 large garlic cloves
  • 2 tablespoons olive oil
  • sea salt/pepper to taste

Steps

  • Put it all in food processor or blender and blend until smooth
  • Serve with salad
