Sweet and Sour Chicken Wings

Crispy skin without being fried makes these great for a super bowl party.

Chicken Wings

Ingredients

  • 2 pounds organic chicken wings
  • Sea salt
  • Sweet and sour sauce (below)

Steps

  • Fill a large pot with water and add enough sea salt for it to taste like sea water
  • bring water to boil then add chicken for 7 – 8 minutes (this is to give it crispy skin)
  • Preheat oven to 450ºF
  • Drip dry chicken after it’s done boiling on a rack over the sink 
  • Put in oven for 25 – 30 minutes
  • Flip then bake for another 5 – 10 minutes
  • Toss in Sweet and sour sauce (below) an serve immediately

Sweet and Sour Sauce

Ingredients

  • 3 tablespoons raw honey, preferably local
  • 2 1/2 tablespoons lime juice
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • Pinch of sea salt

Steps

  • Mix all ingredients together
  • Toss with chicken wings
