Spring Rolls

An adventure in making spring rolls.

This was so interesting! I had seen all these beautiful spring rolls all over the place (looking at you pinterest!) and I was like you know what I'm going to take a whack at that, because why not right? The concept is easy take some rice noodles, some sliced raw fruit and veggies and just roll it up all nice and neat in a a delicate rice wrapper. The rice wrapper bag even had easy instructions on it and so one afternoon my girls and I gathered around in the kitchen to make these spring rolls. Okay, so not as easy as it looks and sounds! I found it to be way trickier and and I tried to wrap up the veggies in some pretty pattern like I'd seen, yeah, that didn't happen. But I did get the hang of it maybe after the 5th one, still wouldn't call myself a pro but they stayed together and they were fun to eat! These are really great for a light lunch or afternoon snack. What will make them look pretty no matter what your skill level is is picking vibrant fruits and veggies. You can use anything you want and add meat/seafood too, but I'll list what we used. Also you usually eat with a sauce, but I think that's an adventure for another day for us. haha. we just salted ours. My girls wouldn't have wanted a sauce anyway. As tricky as these were I would totally make them again! We had fun making them and it was a great activity with my kids and a great way to have them beg for more raw veggies! haha! Also on another note! We're moving! Out of state! So things have been kinda crazy, my husband got a new job and we're going from no snow to lots of it! We're super excited for this new adventure and of course my girls have seen frozen enough to want to move to the snow! But this means a few things for the blog. We're in the middle of so many changes right now I don't know how much I can keep up. I have a couple months worth of recipes on reserve to last for a while but I might have to take a break after I use those up and/or I'll have to go down to fewer posts per month. Plus I forgot to pack my "backdrop" for my pictures so I'll have to work out a new one. Still kicking myself over that since I really loved it, but I was using it for more pictures and forgot about it, oh well. Anyway, that's the latest with us, we're moving and so you'll probably hear less from me and possibly with the craziness of life more typos in the posts *sorry guys*.


  • Rice wrappers, I found mine at whole foods, just always double check your ingredients for allergens
  • Rice noodles like these, prepared according to box’s instructions
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 avocado, thinly sliced
  • Lettuce, torn into smaller pieces


  • Layer in your fillings and wrap the rice wrapper according to the instructions
  • Serve immediately
