Seafood Salad

Ready to put last week's soy sauce substitute to work? This is a great salad for a light lunch or dinner. And it you're not a fan of seafood you can replace it with beef.

Salad

Ingredients

  • 5 ounces leafy green mix
  • 2 cups kelp noodles
  • 1 pound medium shrimp, tails removed
  • 1 pound scallops
  • 1 tablespoon oil/fat of choice
  • 1/2 sweet onion, chopped
  • 1/2 orange bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • Sweet and Sour Dressing (below)

Steps

  • In a wok or large frying pan melt oil/fat on medium heat
  • Add sweet onion and bell peppers, sauté 15 – 20 minutes or until tender
  • Add shrimp and scallops and sauté for another 3-5 minutes or until thoroughly cooked
  • Toss with leafy greens, kelp noodles and Sweet and Sour Dressing (below) 

Sweet and Sour Dressing

Ingredients

  • 6 tablespoons homemade soy sauce substitute
  • 2 tablespoons lemon juice
  • 5 teaspoons raw honey, preferably local
  • 4 tablespoons olive oil
  • 2 large garlic cloves, minced
  • pinch pepper

Steps

  • Put all the ingredients in a small jar
  • Cap tightly and shake well
