Roasted Japanese Sweet Potatoes and Asparagus

We love our roasted vegetables and we haven't been able to get enough of these Japanese sweet potatoes. They add just a hint of sweet goodness into this savory side, yum!

Ingredients

  • 2 medium Japanese sweet potatoes, chopped
  • 1 bunch asparagus, chopped
  • 1 sweet onion, chopped
  • 4-6 tablespoons oil/fat of choice
  • Sea salt/pepper to taste

Steps

  • Preheat oven to 400ºF
  • Toss potatoes, asparagus and onion with oil/fat, salt and pepper
  • Roast vegetables on baking sheet in oven for 30 minutes or until tender
