Roasted Cauliflower and Zucchini

Nothing like roasted veggies!

Roasting veggies may take longer than steaming them, but I think it's well worth the wait. These are a great addition to any meal. We love them with our roasted chicken or fried eggs. Or sometimes just for a mid day snack!


  • 1 head cauliflower, chopped
  • 2-3 zucchinis, chopped
  • 1 onion, chopped
  • 1/4 – 1/2 cup oil/fat of choice
  • Dried Rosemary to taste
  • Sea salt/pepper to taste


  • Preheat oven to 375ºF
  • Toss vegetables, oil/fat, dried rosemary, salt and pepper together in a large bowl
  • Evenly spread out vegetables on a baking sheet
  • Bake for 40 minutes or until tender
