Roasted Broccoli Soup

Our roasted broccoli soup is a delicious addition to this month's collection of green recipes. We're loving it as is or topped with bacon!

  • 2 heads fresh broccoli, chopped
  • 1 head fresh cauliflower, chopped
  • 1 green bell pepper, chopped
  • 1 yellow onion, chopped
  • 4 crimini mushrooms
  • 2 whole cloves garlic
  • 1/4 – 1/2 cup oil/fat of choice
  • 5 cups bone broth
  • Sea salt/pepper to taste
  • Crushed red pepper to taste (optional)
  • 3 tablespoons nutritional yeast (optional)
  • Fresh parsley for garnish


  • Preheat oven to 350ºF
  • Toss broccoli, cauliflower, bell pepper, onion mushrooms and garlic with oil/fat, salt, pepper, and red pepper
  • Roast vegetables on baking sheets in oven for 40 minutes or until tender
  • Combine roasted vegetables, bone broth and nutritional yeast in blender and blend until smooth
  • Heat in large pot on stove on medium heat
  • Garnish with fresh parsley and serve warm
