Raw Apple Pie

Finishing off our month of apple recipes is a raw apple pie.

I was a little skeptical about making a raw apple pie at first. I've actually been wanting to try making one for months now but have been pushing it off. I just wasn't sure if a raw pie could ever compare to the classic fresh out of the oven kind of apple pie. But raw desserts are my favorite. They're delicious, healthy and the easy to make. So I had to give a raw apple pie a try. I'm so glad I did! It's not a freshly baked pie kind of apple pie, but it's own special kind of apple pie. It feels fresh and healthy while still satisfying that sweet craving. It's perfect for dessert or a sweet breakfast with some hot coffee/tea and a good book.

Crust

Ingredients

  • 1 cup walnuts, finely chopped in food processor
  • 3/4-1 cup dates
  • 2 teaspoons maple syrup
  • 1/4 teaspoon cinnamon
  • Pinch cloves
  • Pinch nutmeg
  • Pinch sea salt

Steps

  • Blend dates, maple syrup, spices and sea salt in food processor until dates form
  • Mix in nuts 
  • Spread and press into lightly greased 9 inch pie plate 
  • Put in freezer while making the filling

Pie filling

Ingredients

  • 2 apples of choice, roughly chopped (we used pink lady)
  • 1 apple of choice, thinly sliced
  • 1/4 – 1/2 cup medjool dates
  • 2 teaspoons maple syrup
  • 3/4 teaspoon cinnamon
  • Pinch sea salt

Steps

  • In food processor combine roughly chopped apples, dates, cinnamon and sea salt
  • Blend until the consistency resembles apple sauce
  • Gently mix in thinly sliced apple
  • Pour and spread over pie crust 
  • Spread maple pecan topping over top and freeze for a least 30-60 minutes or overnight
  • Note: defrost for 15-20 minutes before serving 

Maple pecan topping

Ingredients

  • 3/4 cup pecans, chopped finely
  • 4 teaspoons maple syrup
  • 1/4 teaspoon cinnamon
  • Pinch sea salt

Steps

  • Mix all ingredients thoroughly in a bowl 
  • Spread over top of pie
