We've been eating clean now for several years and while it's been super beneficial, it's ben really tough. I think the hardest part has been managing all the allergies. Just because something was clean or paleo didn't mean we could eat it. It's been quite that challenge trying to figure out substitutes for things. One thing we missed was granola or a cereal. especially since granola usually has oats, which we can't have. I know there are grain free paleo options just using nuts and seeds, but I personally wanted something that wasn't just nuts. Although I guess quinoa is technically a seed, haha...but it feels more like a grain. So, glad we figured this one out though, because it's amazing! It didn't last longer than like 2 days the first time we made it. This is also a great recipe to make with kids since there isn't too much chopping it's mostly measuring, pouring and stirring!

  • 1 cup raw walnuts, chopped
  • 1 cup raw cashews, chopped
  • 1/4 cup uncooked quinoa
  • 2 tablespoons hemp seeds
  • 2 tablespoons chia seeds
  • 1/2 cup dried cranberries or raisins
  • 3-4 tablespoons coconut oil, butter or duck fat
  • 1/2 maple syrup, Grade B
  • 1/2 teaspoon sea salt

  • Preheat oven to 275ºF
  • In a bowl mix walnuts, cashews, quinoa, hemp seeds, chia seeds and dried cranberries, set aside
  • In a medium size sauce pan combine coconut oil/duck fat and maple syrup, cook over medium heat until oil/fat melts
  • Pour maple syrup mixture over nut mixture and stir until evenly coated
  • Spread granola evenly onto baking sheet lined with parchment paper and sprinkle with sea salt
  • Cook in oven for 20 minutes, stirring twice during cooking
  • Allow to cool for about 30 minutes or until fully hardened (if your kitchen is warm putting it into the fridge/freezer can help), break into chunks and store in an air tight container for up to a week
