Pumpkin Chia Seed Cookies

It's just that time of year for warm baked pumpkin goodies.

Corn Free
Dairy Free
Egg Free
Gluten Free
Soy Free
I can't believe the holidays are already upon us! It's funny how for the whole year it feels like the holidays are so far away and then all the sudden they're here and if you're like me mostly unprepared for the joyful chaos this season brings. So before things get too crazy try out these easy vegan pumpkin chia seed cookies.


  • 1/4 cup pureed pumpkin
  • 1/2 cup favorite organic nut butter, we used this one
  • 2 tablespoons maple syrup
  • 3 tablespoons chia seeds
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon (optional)
  • Pinch each: nutmeg, cloves, ginger (optional)
  • pinch of sea salt


  • Preheat oven to 350ºF
  • Mash all ingredients together with a fork and let sit for 10 minutes
  • Drop 1 tablespoon size scoops onto parchment line cookie sheet, should make 12
  • Bake for 8-10 minutes or until golden
  • Let sit for 2 – 5 minutes
