Prosciutto Wrapped Pears and Cucumber

This is an easy recipe, that's great for little kitchen helpers. My girls really loved helping make these, of course I do all the cutting but they like helping wrap them and it makes a great snack or cold light meal during the summer months. I don't have exact measurements, because I could keep up with how many prosciutto slices we used, they were just being eaten while we were making them! haha! You could also probably use just half a slice of prosciutto for each wrap, but my kiddos like it so they just used the whole thing, plus it was one less thing for me to cut! :)

Ingredients

  • 1 pear, sliced
  • 1 cucumber, sliced
  • Prosciutto¬†
  • Olive oil
  • Lemon juice
  • Sea salt/pepper
  • Mint leaves (optional)

Steps

  • Put pear and cucumber and if using, mint leaf on one side of the prosciutto slice, then roll
  • Drizzle a little bit of olive oil, lemon juice and salt/pepper on the rolls
  • Serve immediately
