Paleo Humus

Don't get me wrong a I love a good humus made with garbanzo beans/chickpeas, but sometimes beans just aren't the easiest to digest for some people, like myself. So I was super excited about figuring out a humus to use when I didn't feel like shifting my digestive track into hyper drive. Plus, it's a fun way to add some cauliflower into your diet!

Ingredients

  • 1 head of cauliflower, chopped (6-7 cups)
  • 4-6 tablespoons tahini or nut butterĀ 
  • 1/4 cup olive oil
  • 1 small garlic clove, minced
  • Juice of half a lemon
  • Sea salt/pepper to taste
  • Additional spices to taste (optional): cayenne, paprika, cumin, etc.

Steps

  • Steam cauliflower on stovetop 10-15 minutes or until tender
  • Combine all ingredients in food processor until it reaches desired consistency
  • Chill in fridge for an hour before serving
