Lamb with Mint Sauce

We couldn't think of anything better than some mint sauce for our second green recipe this month! I love how this recipe is both easy and impressive, making it perfect for a hassle-free date night!

Lamb

Ingredients

  • 4 – 1 inch thick lamb chops,¬†Icelandic Lamb has a more subtle taste than New Zealand lamb
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon pepper
  • 1 teaspoon sea salt
  • 1-1 1/2 tablespoons oil/fat
  • Mint sauce (below)

Steps

  • Mix nutmeg, pepper and sea salt together and rub into the lamb chops, and let sit for 10-20 minutes
  • Melt oil/fat in pan/skillet on high heat¬†
  • Place lamb chops on the pan/skillet, cook for 2 – 4 minutes each side for rare lamb chops
  • Increase the cooking time for medium rare or well-done lamb chops
  • Serve hot with Mint Sauce (below)

Mint Sauce

Ingredients

  • 1/2 cup fresh mint leaves
  • 1/4 cup Bragg’s apple cider vinegar
  • 1 tablespoon raw honey

Steps

  • Combine all ingredients in food processor until smooth
  • Let sit in fridge for up to an hour before serving
  • Will keep in air tight container in fridge for 2-3 days
