I love the fall. It is my absolute favorite season. I do like winter (in southern California) and the spring especially the beginning. Basically I don't like the heat very much. (Sorry to all you summer lovers!) One of my favorite things about fall cuisine is the return of getting cozy with a warm bowl of soup...yum... I've always found the key to a good soup is quality ingredients and you can't do wrong with a nutrient rich homemade bone broth as your base.
Ingredients
- Chicken caracas and bones, left over from roast chicken
- 1-2 cups roughly chopped vegetables and herbs of choice, current favorite: celery, onions and garlic
- Filtered water
- Sea salt/pepper to taste (optional)
Steps
- Combine chicken caracas, bones, vegetables and herbs in crock pot
- Fill crock pot to the top with filtered water
- Set on low and leave for 10-12 hours, or over night
- Will keep for a week in fridge or a couple months in freezeĀ
