I've been on the hunt for a good tortilla for years. The thing I don't like about most gluten free tortillas or grain free/paleo tortillas is they either are super inflexible and crumble too easily or they just don't taste like a tortilla. But I finally found this amazing flour - cassava flour, yes like the yuca plant. It's incredible! It makes flexible tortillas that taste closer to actual wheat tortillas then anything I've had before.
The funniest thing was that I ordered a bag of this flour from amazon fully intending to experiment until I figured out a good recipe, but when the bag came in it already had a tortilla recipe on the back! So today I'm just going to share a link to the flour. The only thing I'd watch out for is I've found that I've had to add a bit more water to make sure it's at the right consistency.
