Fried Plantains

I couldn't resist posting a fried plantain recipe, especially since I have a half cuban husband.

We love plantains at our house. Whenever they're in stock at the store I grab a bunch to fry on a Sunday afternoon. Funny but actually less greasy with Duck fat then olive oil, who would've thought?

Ingredients

  • 4 very ripe plantains (they should be mostly brown), sliced
  • Oil/fat of choice
  • Sea salt (optional)

Steps

  • Set out a brown paper bag on the counter next to the stove (this will be used to soak up the excess oil)
  • In a large frying pan put enough oil to fill it about 1/4 – 1/2 inch deep over medium heat
  • When the oil starts to get “shimmery” add the plantains, try not to over crowd them
  • After a couple minutes or when the edges start to turn golden flip the plantain slices
  • When the other side is also golden/brown remove the slices and place them on the brown paper bag
  • Sprinkle salt on immediately
  • After 2-3 minutes move to a plate and serve
