Eggs, Bacon and Zucchini

Try bacon and eggs with some additions form the garden!

Fried Eggs

Ingredients

  • 6 Pasture Raised Eggs
  • 1-2 tsp oil/fat of choice
  • Sea salt/pepper to taste

Steps

  • Melt oil/fat in skillet over medium heat
  • Crack eggs into skillet, careful to not break the yoke, might need to do to batches with smaller skillet
  • Flip when the egg whites start looking almost fully cooked, about 2 minutes
  • Cook for another minute, remove while egg yokes are still runny
  • Layer with the zucchini, bacon and some freshly chopped tomatoes

Bacon

Ingredients

  • 1 lb. pork belly, thinly sliced by butcher 

Steps

  • Place Bacon in skillet over medium heat
  • Flip occasionally until throughly cooked, 5-10 minutes

Zucchini

Ingredients

  • 2-3 large Zucchinis, cut into 1/4 inch strips lengthwise
  • 1-2 tsp oil/fat of choice
  • Salt/pepper to taste

Steps

  • Melt oil/fat in frying pan over medium heat 
  • Place as many zucchini strips in a row in frying pan that will fit, cover and leave for 5 minutes
  • Flip and leave another 2-3 minutes or until zucchini are tender
  • Repeat until all zucchini strips are cooked
  • Salt/pepper to taste
