Crockpot Chicken

A while back I shared how we roast our chickens in the oven, which is one of my go-to meals. This is also great, very little prep time and especially good for those busy days where you need to be out of the house all day. You'll be able to come home to a good smelling house with a hot dinner ready to be served. I almost feel like I'm being pampered with crock pot meals, simple easy and you forget the little work that you did do during the day so it's like someone else made dinner that night. hehe. This meal is so easy a kid can do it (with supervision of course :)). My girls helped season this chicken, as you can see they really like to season things! haha. Don't worry if you over season, it's pretty easy to brush off and the herbs make your house smell great! Another great thing about making a chicken in a crockpot is after you remove all the meat, you can fill your crockpot, with all the bones and veggies still inside, with water leave it on low overnight and you'll have homemade bone broth in the morning!

Ingredients

  • 1 whole organic chicken, giblets removed
  • 2 stalks celery, roughly chopped
  • 1 yellow onion, roughly chopped
  • Sea salt/pepper to taste
  • Fresh or dried herbs to taste (optional, but I highly recommend): thyme, rosemary, parsley are a few I like to throw in

Steps

  • Layer the celerly and onion into the bottom of the crockpot
  • Put the whole chicken into the crockpot on top of the cerely and onion
  • Sprinkle in sea salt, pepper and herbs
  • Turn the crockpot on low and cook for 6-8 hours
  • Serve warm
