Chicken Salad

We think thanksgiving leftovers are the best and our chicken salad recipe also works perfectly for turkey salad.

I hope you all had an awesome Thanksgiving full of friends, family and amazing food! This was our second Thanksgiving eating clean and we once again didn't feel like we missed out on anything. First time around I was a bit nervous, but this year was so much fun! After eating clean for nearly 2 years now I feel like I've figured out enough recipes to make the holidays yummy. Best part is I feel like my family can fully enjoy and participate in the holidays. I mean that as an encouragement to everyone with diet restrictions for whatever reason. It's possible to eat clean and enjoy the holidays or really any day of the year for that matter. After all...Life should be yummy!

Ingredients

  • 2-3 cups shredded chicken or turkey
  • 2 celery stalks, chopped
  • 1/2 onion, chopped
  • Mayonnaise to taste, try our homemade mayonnaise
  • Dijon mustard to taste, try our homemade dijon mustard
  • Salt/pepper to taste

Steps

  • Mix all ingredients in a large bowl
  • Serve on a salad or allergy friendly crackers, like these hazelnut crackers
