I was really craving a good pudding. One that was easy and didn't require me to make an extra trip to the store. At first I had thought about using a banana, but I honestly didn't want a banana pudding. I just wanted a simple pudding that felt healthy and a bit on the more "vanilla-y" side so I could pair it with whatever fruits and nuts I had on hand. Four ingredients and a couple hours later and Voilà! So easy and tasty. A warning though if you're not a fan of chia seeds or tapioca pudding this might not be the right pudding for you, but for those of you who don't mind some texture in their pudding this is a healthy breakfast option for the new year!
2 1/3 cups milk of choice
2/3 cup chia seeds
2-4 tablespoons or to taste sweetener: maple syrup, honey, etc.
Pinch sea salt
Stir all ingredients together in a bowl or mason jar
Leave covered in fridge overnight
Serve with your favorite fresh fruit and nuts
Will keep for a couple days in an airtight container in the fridge
