Cauliflower Rice

Simple and fast and is a great rice substitute.

This is actually really good, I had my doubts but this turned out really well. I've had it now with chili and curry and it's been great! The only thing I have to say about it is don't (please don't) overstuff the food processor. I wasn't paying attention and I totally did this, this is why in the picture it looks more mushy then grainy. Very sad, but I didn't have another head of cauliflower on hand, so this had to do. so don't over stuff your food processor and it'll be great! And it's a great way to sneak in more veggies to your diet.

Ingredients

  • 1 head cauliflower, roughly chopped
  • 2-3 teaspoons oil/fat
  • Sea salt/pepper (optional)

Steps

  • Pulse the cauliflower in the food processor, and this is important don’t overfill your food processor, if you have a large amount to do it in smaller batches. (This is why my batch this time turned out more mushy *sad*)
  • Once it’s down to the size of about couscous (remove any of the remaining large pieces and process those by themselves) transfer to a large skillet, cover and cook with the oil for about 5-8 minutes
  • Once it’s as tender as you would like it’s done
  • Serve warm
