Cauliflower Alfredo Sauce

I've been wanting to try making an alfredo sauce for a while now. I was a bit worried, but this turned out delicious! It's great with zucchini noodles, black bean noodles or over grilled chicken. It's such a great way to get some added veggies into your diet and if you're pairing it with zucchini or black bean noodles it's a totally vegan meal. Maybe a healthy meal for your special someone on Valentine's?

Ingredients

  • 1 head cauliflower, chopped and steamed (about 6 cups)

  • 1 cup water from steaming the cauliflower 

  • 2-4 Tablespoons oil/fat sautéed with 2-3 large cloves garlic for 2-4 minutes

  • 1/2 cup dairy free milk

  • Sea salt/pepper to taste

  • 2-4 Tablespoons nutritional yeast (I used 2 1/2 Tablespoons)

  • Fresh lemon juice to taste 

Steps

  • Blend altogether
  • Heat up on stove top, add more water from the steamed cauliflower if needed to make it less thick.
