Bell Pepper and Chili Chicken

I love those one dish wonders were you can throw everything into a pot or pan and out comes you're meal or most of it at least. The flavors all meld together which is amazing, but personally my favorite part...less dishes to clean! We loved this one dish wonder with some nice crisp cucumbers on the side, it was a perfect light-ish lunch. It would also be great with rice or quinoa if you're looking for more of a grain to pair with it, or some baked potatoes, YUM!


  • 2-2.5 pounds chicken thighs
  • 1 yellow onion, chopped
  • 1 red bell pepper, cut lengthwise
  • 2 roma tomatoes, chopped
  • 2 garlic cloves, diced
  • 1 teaspoon basil
  • 1 teaspoon oregano 
  • 1/2 teaspoon each cumin, paprika and cayenne (or replace with chili powder)


  • Preheat oven to 400ºF
  • In a 9×13 inch baking dish layer in the veggies, then the chicken thighs, then sprinkle the seasonings on top
  • Put in the oven for about 35-40 minutes, or until thoroughly cooked
