Baked Cod with Mango Salsa

We can't get enough of the mango salsa, so I knew I had to use it in a dinner!

Baked Cod

Ingredients

  • 4 wild-caught cod fillets, roughly 8 ounces each
  • 2 tablespoons oil/fat of choice
  • 12 cup Hemp seeds
  • 12 Lime
  • Sea salt to taste

Steps

  • Preheat oven to 400ºF
  • Mix oil/fat with hemp seeds and lime juice, set aside
  • Lay fillets on lightly greased baking sheet and lightly coat with oil/fat
  • Bake for 10 minutes, take out and coat tops of fillets with hemp seed mixture
  • Bake another 10 minutes, until opaque and easily flakes with a fork, salt  to taste when done
  • Serve with bell peppers and our mango salsa

Bell Peppers

Ingredients

  • 2 bell peppers, sliced length-wise into strips
  • 12 tablespoon oil/fat

Steps

  • While the cod is in the oven, sautee bell peppers in skillet on medium heat for 15-20 minutes, stirring occasionally
Serve it all on a big beautiful Romaine Lettuce leaf and use cilantro as garnish, enjoy!
