Bacon Wrapped Chicken Legs

Since I shared where to get clean bacon last week, I thought it might be a good time to share a bacon recipe. Or maybe I was inspired by Ron Swanson (any Parks and Rec fans out there?)....Actually I feel like this recipe is a nice mix of Leslie Knope and Ron Swanson. Ron Swanson: two meats in one dish, Leslie Knope: is that added overachiever flair from all the herbs, spices, fruit and veggies. So there you have it folks, we're wrapping up October with a Parks and Rec inspired dish!


  • 6 chicken quarters
  • 6 pieces of bacon (pork belly slices)
  • 1 gala apple, chopped
  • 1 yellow onion, chopped
  • 2 fresh sprigs each rosemary, thyme, marjoram
  • Dash of nutmeg
  • Dash of cloves
  • Sea salt/pepper to taste 


  • Preheat oven to 400ºF
  • In a large baking dish layer chicken quarters over apple, onion and fresh herbs
  • Bake for 35-40 minutes
  • Remove chicken quarters from the oven 
  • Wrap each leg with a slice of bacon, be careful because the chicken will be very hot
  • Sprinkle with nutmeg, cloves, salt/pepper and bake another 10-15 minutes, or until bacon is fully cooked
  • Serve warm
