Mint Avocado Salad

I think I've mentioned before how with some family members I have to hide that fact that they're eating veggies. Well they ate this! I think the combo of the mint, lemon and avocado just gave it a bit more flavor than eating cauliflower straight up (or maybe their taste buds are changing?). Plus it is super nice to have a recipe that doesn't over heat our small house on a hot day. Just chop, mix and serve! It might be a nice side to have for a special Mother's Day lunch!

Ingredients

  • 2 large avocados, chopped
  • 1 small cauliflower, about 3-4 cups chopped
  • 3 persian cucumbers, halved lengthwise and sliced
  • 1/4 of a red onion, diced
  • 2 tablespoons fresh mint, chopped
  • Juice of half a lemon of to taste
  • Sea salt/pepper to taste

Steps

  • Toss it all in a large bowl, keep in fridge until ready to serve
