2 Ingredient Paleo Pancakes

This recipe was actually first given to me by our neighbor, who now follows this blog too! It was about the time we were first making all the changes to our diet and I didn't have very many recipes other than boiled chicken and steamed veggies. I have to say at first I was a bit worried that they would taste too banana-y but they don't they taste like little pancakes. They're such a fun way to enjoy a paleo breakfast or just for a treat for whenever you need something "breakfast-y". Also, no worries if you can't have bananas, you can try it with pumpkin instead! Even add a little pumpkin pie spice if you feel like making them a bit more fall worthy.


  • 2 eggs
  • 1 banana or 1/4 pumpkin purée  
  • Chia seeds to taste (optional)


  • Put a lightly grease a skillet/frying pan on the stove over medium heat
  • Either blend ingredients together in food processor or mix by hand with a fork
  • Ladle batter onto skillet, each pancake can be about the size of a silver dollar without falling apart, but they can be bigger if you add the chia seeds because the seeds help the batter bind together
  • When edges are “dry/cooked” flip the pancake over and cook for another 30 seconds or until fully cooked
  • Serve plain or with your favorite toppings!
